Every part of that open world that your car can get close to or your camera can swing around to see has to have a certain level of detail to it. not to mention they're completely different games in the sense that GT7 is circuit racing and you have a very clear polygonal budget and tight control over what resources go where in enclosed tracks where FH5 has an open world. Trying to compare the tracks in GT7 against FH5's rendition of Mexico is a bit apples-to-oranges. but I think the reason why FM7 was chosen was because you could also compare the environments directly because both games have some of the same tracks in them.
